16 ounces Low-fat cottage cheese 1 cup Canned kernel corn 6 ounces Shredded, reduced fat cheddar cheese 1/4 cup Sliced green onions 2 tablespoons Chopped fresh cilantro 1/4 teaspoon Mexican seasoning 6 Flour tortillas (6") 1/2 cup Salsa
Directions:
Pre-heat oven to 350 Grease 9 x 13 inch baking dish Mix first 6 ingredients but reserve 1/2 cup cheddar cheese Spoon about 1/2 cup of mixture down center of each tortilla Roll and arrange seam side down in baking dish Top with salsa and remaining 1/2 cup cheddar cheese Bake at 350 for 30 minutes.
